Well, we cook for ourselves, too!

What are your favorite recipes, when you cook for yourself?  It could be something easy that you make on-the-job or bring to a job with you...or something that you treat yourself to when you're at home?

Nothing like EasyMac here!  I'm talking real recipes.  ;)

Re: Chicken Corn Soup
Reply Quote

I really like soup... especially in the winter.  Everytime I make it the whole house just gathers around the kitchen.  Of course, this meant more when I lived in a group situation... but still... Smile [:)]  I'm not sure if this one for babysitting, but I'll post it anyway. It's the same kind you get in Chinese restaurants if yours happen to have the chicken corn soup.

Note: I have seen a few restaurants make the soup with strips of pork instead of chicken.  Either way, they taste REALLY good.

Ingredients:

1 slab of boneless chicken *** or 1 slab of pork steak
1 can of cream of corn
1 cup of frozen corn
2-3 cans of chicken broth
corn starch
2 eggs
salt
black pepper
white pepper
1 stalk of spring onions (if you like it)

Directions:

Cut the chicken or pork into really thin and small strips.  Once that's done, put a table spoon of corn starch into the pile and mix it up.  Drip it with about a tablespoon worth of cold water, mix it and let it sit.  (This will give the meat a really tender texture when you consume it.)

Next, get a pot and pour in 2-3 cans of chicken broth (depending on how much soup you want to make).  Add the cream of corn and about a cup to a cup and a half of frozen corn.  What I usually do here is add about a can of water into the cream of corn can to wash out the left over's and pour that into the pot to add volume.  Add a teaspoon of salt, black pepper and a sprinkle of white pepper.  Once it starts to heat up, put the meat into the pot and start stirring.

Take about two tablespoons of corn starch and put it into a cup, add about 1/4 cup of COLD water into the cup and mix it until it it becomes a white liquid. (Important! Use cold water or it will become this weird chunky mix.)  Once that's stirred up, pour it into the soup mix and keep stirring until the soup thickens.

Crack the two eggs and add a lil salt into them, beat them until they're beaten good.  When the soup starts boiling, turn down the heat a lil bit and start dripping in the eggs.  You don't have to mix it as the boiling soup itself will mix it.  Once all the eggs are in, stir it up a lil bit to mix the soup up.  If you like spring onions, now is a good time to dash some up top.  I usually skip this step.

The soup is great with added white pepper... if you try this recipe, let me know how it turns out for you.

This recipe is very similar to Zuppa Tuscana at Olive Garden, so if you like that, you should love this.
Serves 8-10

Ingredients:
2 pounds hot sausage, (Jimmy Dean or Tennessee Pride are good ones)
12 slices of bacon
1 small onion, finely diced
2 tsp minced garlic
6 medium to large potatoes, peeled and sliced 1/4 inch thick (more or less to taste)
1 quart water
1 packet instant chicken broth, or 1 chicken bullion cube
1/2-1 quart heavy whipping cream (half and half is fine)
red pepper flakes to taste

Directions:
Cook the sausage in a large pot on medium high until done, strain and remove.  Cut slices of bacon into half inch wide strips, and add to pot.  Add onion to pot.  Cook on high until onions are clear and bacon is done.  Add garlic, cook for 1 additional minute.  Add water, chicken broth, and potatoes, and simmer for 15 minutes, or until potatoes are soft.  Add whipping cream.  Also add red pepper to taste.  Serve and enjoy!
