This snack is called fruit smiles.
1 cantelope 3 1/2 lbs
1 cup rasberries (or fruit of choice)
1 pk strawberry jello ( or your favorite flavor) prepared as directed in package.
Whip cream (optional)
Cut melon in half, long ways; remove the seed and fibers.
Place melon halves upside down for about 10 min to drain any moisture.
Prepare gelatine 4 serving packet , reducing the cold water amount to3/4 of a cup to help it hold its shape when its time to cut it.
Place the melon half cup side up into bowls small enough to hold them steady, then press with a paper towel to absorb any moister. Spoon the 1/2 cup of rasberries into center, then the gelatin.
Refregerate for 3 hrs or until gelatin is firm. Test the gellatine when its ready it should not stick to your finger when touched.
Cut the melon into wedges and top it with whipped cream.
